I think privacy in technology these days is mostly just a marketing ploy. Many tools claim to run on device, but in reality, they still silently connect to the server. Policies like we don't misuse data sound good, but they're not trustworthy because it's still a centralized system that can be changed anytime.
What I find noteworthy is the approach like @TheARCTERMINAL: they don't force users to believe them, but design the server so that it can't read sensitive data from the start. Everything is kept in the browser through encryption, not promises.
Frankly, if you still believe web2 will keep your data for you without exploiting it, that's just self reassurance.
